Kovakkai (tindora) Poriyal (Ivy Gourd vegetable stir-fry)

Ingredients: 250 gm Kovakkai (‘tindora’ in hindi and ‘ivy gourd’ in english)

Mustard seeds 1 tsp to saute, broken urad dal 1/2 tsp to saute, a crushed & torn red chilli – de-seeded, a crushed garlic clove.

2 tsps of oil

Salt to taste

curry leaves for garnishing

Method: Wash & cut the Kovakkai. Saute mustard seeds, urad dal, curry leaves, red chili & garlic in heated oil in a pan.

Add kovakkai when the seeds splutter and salt. Do not add water. Cook on low flame till the vegetable is done.
