Tofu-Green Peas Tomato Thokku

Ingredients:

Tofu (Bean curd) 250 gm (cubed), fresh green peas (sweet peas) shelled 250 gm, tomato 5-6 mid size, onion 1-2, garlic flakes 1-2, mustard and cumin seeds for sauteing, Madras sambhar/curry powder – 3 tsp (or alternately red chili powder 3 tsp plus dhania (cordiander seed) powder 3 tsp), salt to taste, garam masala powder (this can be made at home by roasting and powdering bayleaf, saunf, cardomom, cloves, cinnamon sticks dry in blender) 1/2 tsp,  a pinch of turmeric, coriander for garnishing, water and oil for cooking.

Method:

Rinse the tofu (beancurd) thoroughly in fresh water and cube evenly.   Grate the onion and tomatoes fine and keep aside.  Wash the fresh green peas (shelled).   Crush the garlic cloves.

Take 3 tsp oil in a thick-bottomed pan and heat it.    Deep fry the cubed tofu and place the pieces on a tissue paper to take off the extra oil.

Saute the mustard seeds and cumin seeds in the same heated oil and when they splutter, add the sliced onions and garlic first.  When the onion gets golden brown in colour, add tomatoes.   Stir fry for a few minutes and add the shelled peas and the tofu pieces.   Also add the red chili-dhania powder, turmeric, salt and garam masala powder one by one, all the time stirring the karai.

Mix everything well and add water for the peas to cook.  Close the pan and allow 30 minutes on low flame for the gravy to be done thick.

Take off thokku from the stove and garnish with fresh washed coriander leaves.

The hot side-dish (gravy) Tofu-Green Peas Tomato thokku is ready to serve.  This quantity serves 3 people.  Interesting subzi for dosas, parathas, naans anything.
