Okra (Ladies Finger) (Bindi) Stir-fry (Vendaikkai poriyal)

This is a very simple way to cook  Okra (Ladies Finger/Bindi) which is full of fibre.   We are told from childhood how bindi (vendaikkai in tamil) increases our memory power.   For understanding math better, bindi is a must atleast once a week in children’s diet.  Or so I keep telling my son the way my mother and grand mother told me!  Even otherwise, bindi or okra has a great cooling effect on our body.   Good and most suitable for terrible Indian summers to bring down the body heat.     In rainy season or winter, a mild sprinkling of pepper powder must make it okay.

Here is how i make it at home:

Ingredients:

Ladies finger (Okra) (bindi in hindi) (vendaikkai in tamil) – 250 gms, cut (as in picture)

One onion (grated), 1-2 garlic cloves (crushed)

Curry leaves 5-6, dried red chilies (deseeded and torn) for garnishing/sauteing

Mustard seeds 1/2 tsp, urad dal 1/2 tsp for sauteing

3 tsp cooking oil for stir-fry

Pepper powder (optional) – 1/2 tsp

Salt to taste.

Method:

Peel and grate the onion and crush the garlic.

Cut the Okra or ladies finger like in the picture after washing thoroughly and straining it completely of water first.   Presence of any extra moisture will make ‘bindi’ even more sticky as its a gummy vegetable!

Heat 2-3 tsp oil in a pan and add the 1/s tsp mustard seeds and urad dal and torn, de-seeded red chili.   When everything splutters, add the grated onion and crushed garlic and stir-fry to golden brown.

Add the cut ladies finger (okra) next, salt carefully keeping in mind, the final portion will reduce to less than half the original volume once the vegetable is cooked.   Picture the reduced portion in mind and salt accordingly.

Close the lid and cook for a couple of minutes.  Lift the lid and keep stirring every 1-2 minutes.  No need to stir-fry for a long time as this will result in nutrition loss.   REMEMBER NOT TO ADD EVEN A SINGLE DROP OF WATER IN COOKING.  Switch off the flame when the vegetable is cooked or three-fouths done.  Sprinkle pepper powder 1/2 tsp on top and stir again.

Nutritious Okra (or) Ladies Finger stir-fry (Bindi or Vendaikkai Poriyal) is ready.
