Veg Fried Rice (South Indian restaurant style)

VEGETABLE FRIED RICE – SOUTH INDIAN RESTAURANT STYLE

Ingredients:

Basmati Rice (preferably) – 3 cups or Plain rice – 3 cups or Thai rice – 3 cups

Olive oil – 2 tbsp

a small bunch of spring onion

one big capsicum

one big carrot or 2 small ones

ginger a slice

green chili -6-8

salt to taste

ajinomoto – 2 tsp

white pepper powder – 2 tsp

soya sauce – 2 tsp

water

 Method:

Rinse the basmati rice thoroughly in water and soak it in water for atleast 30 min.  Drain the water,  Heat a shallow pan and empty the rice into it stirring for a few minutes.  Turn off the flame and let the rice cool for 15-20 minutes.  Transfer the cooled rice to electric rice cooker.  Add 4.5 to 5 cups of water to the rice.  Next add salt (2 tsps usually for 3 cups approximately – might vary from brand to brand), half a tbsp of  olive oil to the rice.  Let the rice soak for another 30 min or so and then cook the plain rice.  Within an hour the rice will be ready.

Grate the spring onions, carrot and capsicum fine.  Split the green chili.  Grate the ginger very fine.  Now heat the pan once again and add 1 tbsp of olive oil.  Do not wait for the oil to vaporize.  Add ginger and green chili first, then the carrots, followed by capsicum and finally the spring onion.  Keep stirring for 4-5 minutes taking care to see that the vegetables are not over-cooked but only don’t remain raw anymore.  Add a dash of white pepper powder, a tsp of soya sauce and 1/2 tsp of ajinomoto along with 1/2 spoon of plain salt.  Stir well and switch off the flame.  Let the contents cool a little in the pan.

Now add the remaining olive (and add more if needed), ajinomoto, white pepper powder and sauce to the top of the cooked rice.  Transfer the vegetable from the pan atop the rice.  Mix well and evenly with a long handled spoon taking care to see that the rice is not broken while mixing.

Now Vegetable Fried Rice in South Indian restaurant style is ready to serve.  3 cups of basmati rice serves about 8 people.  Vegetable fried rice goes well with any side dish gravy or crispy.  Today I have made Tofu-Capsicum curry to go with it.
